Bitter-sweet salad of chicory, radicchio, pomegranate & oranges

Ruby salad recipe

Wash the radicchio and chicory leaves and coarsely chop into large pieces. Dice the feta cheese.

Slice off the top and bottom of each orange and remove the peel and white pith. Remove the membrane around each segment and put them into a bowl.

Arrange the salad leaves in a salad bowl. Add the orange segments and pomegranate seeds. Scatter the diced feta over the leaves.

In a small bowl mix the olive oil with the cider vinegar and honey. Add a little salt and a grinding of black pepper. Mix well and drizzle over the salad.
